Smoked Tofu Burnt Ends Recipe

- 1 package of extra-firm tofu, preferably organic
- 1/4 cup Rump Shaker BBQ Rub, substitute your favorite BBQ rub
- 1/2 cup Meat Mitch WHOMP! BBQ Sauce, substitute your favorite BBQ sauce
- 1 1/2 tray disposable aluminum pan, substitute deep baking dish
- 1 Tofu Press, optional

Steps
Preheat the smoker
Preheat your smoker to 250°F. It's not mandatory, but you can add a pan of water to the smoker to add moisture.
Press the tofu
If time allows, use a tofu press to remove some of the water from the tofu. This will help enhance the flavor of the smoked tofu and provide a better overall bite when finished cooking.
Cube and season the tofu
Cut the tofu into 6 even cubes. You can cut them smaller if you want more flavor. Sprinkle a solid coating of the BBQ seasoning evenly over all sides of the cubes. Allow the rub to adhere for 30 minutes. For additional flavor penetration, season the tofu the night before and store it in the refrigerator until you're ready to cook it.
Start smoking the tofu
Place the tofu cubes on a wire rack to prevent them from falling through the grates. Smoke at 250°F for 1 1/2 hours. They should have a nice color and be a bit firmer.
Coat the smoked tofu in BBQ sauce
Once the tofu has finished smoking, remove it from the smoker and place it in an aluminum pan. Pour the BBQ sauce over the smoked tofu and toss well to combine. Be careful not to crumble the tofu. Return the pan to the smoker and increase the temperature to 300°F. Cook for 30-45 minutes longer until the BBQ sauce is tacky.
Serve the smoked tofu burnt ends with additional BBQ sauce
Allow the burnt ends to cool for a few minutes, toss again to fully coat the cubes, and serve with additional BBQ sauce.
