How To Slice a Brisket (With Walkthrough Video)
Slicing a brisket may seem overwhelming, but today I’m going to show you an easy, foolproof way to do it.
Step 1
Start by rotating the brisket towards you on a slight angle and then start slicing on the opposite angle. This will allow you to cut against the grain which results in more tender bites. Slice the lean portion of the brisket into 1/4″ slices – about the thickness of a pencil.
Step 2
Start straightening out your slices as you get closer to the point of the brisket – about half way down. Your slices will be thinner on one end than the other, but you’ll be continuing to slice against the grain.
Step 3
Once you’re done cutting your lean slices, rotate the point and remove the outer edge to create your first set of burnt ends. These are my favorite bites out of the entire brisket!
Remove and save the bottom lean portion of the meat you just removed. The sections will be separated by a band of fat. I use the lean portion for chopped beef, stew, chili, and many other recipes. Slice this section into cubes about 1 inch wide.
Step 4
Slice the brisket point into thicker slices parallel to the section you removed for the burnt ends. Once you near the end of the point, repeat the process from step 3 to make more burnt ends.
Step 5
Admire the beautiful smoked brisket you just sliced before everyone devours it!
